Your Ultimate Guide to Brew Yerba Mate

Indeed, the rumors are true: Making the perfect Yerba Mate infusion is an art, a ritual with simple yet sacred steps you must follow.

WE LIKE TO KEEP IT SIMPLE:

1 · what you will need
While it’s not a must to have it “the 
traditional way”, using a gourd (mate)
and a bombilla (a metal straw with a
filter) is truly the essence of the tradition.
2 · Avoid Boiling the Water
Opt for hot water, ideally around 
167-176ºF (75-80ºC). Boiling water 
can scorch the leaves, diminish their 
nutrients and result in a bitter infusion.
3 · MAKING THE MATE
Add the Yerba to the gourd. Cover the top with your hand and tilt it so that one side of the herbs is higher and stays dry. Pour a little water on the lower side; only then introduce the straw. Finish pouring, always leaving the high side of the leaves dry.
4 · Enjoy and Share the moment
Yerba Mate is often enjoyed socially, so consider sharing it with friends and family to experience the communal aspect of this tradition.
SOME FINAL RECOMMENDATIONS

ALWAYS POUR IN THE SAME SPOT: Leaving the rest of the top leaves dry can help you extend the life of your Mate. You can pour water on them later as a last reserve.

DON’T MOVE THE STRAW. EVER. The only exception is if you want to create a small hole to add sugar (so it can reach the bottom). For this, adjust the straw only after you’re done with your serving. Memo: it may be a bit tricky to do it before that…

IF SWEETENED. You can add some stevia or sugar to each serving before you pour (remember the hole we mentioned). An easier option is to add honey or sugar directly to the hot water, mixing it well in your thermos. It’s always best to have your own thermos with you. Consider 500 to 700 ml as an individual serving of water for enthusiasts.

Finally, in Argentina, it is customary to share Yerba Mate from the same gourd with friends or family (hey, no judging!). If you choose to share with your significant other, that’s perfectly fine. Remember: when you hear the sound as you’re sipping, it signals that your serving is done, and it’s now your partner’s turn. So, don’t be rude—finish your serving!
